The Boat
The cuisine is a fusion of international gourmet food with the tradition of Argentine home cooking. Having been lucky enough to travel to different places, I have been incorporating dishes and techniques that give the food we make on board a truly cosmopolitan touch. That's why on a menu you can find different types of fish preparations from grilled fish, grilled fillets, traditional or modern ceviches like passion fruit ceviche or sushi. The same goes for seafood, we prepare grilled lobster with garlic and parsley like thermidor lobster or a variation of the famous shrimp in pumpkin but with lobster… ”langosta na moranga”. Galician style octopus, mixed paellas, fresh Cambodian mixes...etc. Of course, the Italian Spanish root is present and that is why on the menu we also offer spagetti with Bolognese sauce or with homemade pesto when we have fresh basil, chicken lasagna, pizza also handmade by us, Spanish tortilla and many other things that come to mind while having fun in the kitchen.
We also deal with a wide menu of options for different types of special diets such as vegans, vegetarians, etc. And we do everything with a lot of love.

Captain Cristóbal, originally from Mamutupu Island, is the new captain of the Swala. As a member of the Guna people, his connection to the sea and the islands runs deep. At just 28 years old, he has a long history in Guna Yala and several years sailing on charter boats. He is fluent in the Guna language and has excellent connections with locals.

I was the owner of a cultural restaurant bar, where I combined my two passions: art and cooking.
This is my second year in San Blas, where I fell in love with life at sea. I enjoy welcoming and entertaining visitors with exquisite dishes, made with love and dedication.
I have experience with seafood, gluten-free, and vegetarian dishes.
